Sustainable Advent Day Four: Scrap the scraps

Today I encourage you to scrap the composting!
STOP! Don’t scrap all composting but do save your vegetable peelings from the caddy of doom.
Christmas is a wasteful season, particularly for food waste. It is estimated that over 54 Million platefuls of food are wasted during December in the UK.
Instead of composting your root vegetable peelings and onion skins from each meal, collect them and chuck them in the freezer. They will keep well for at least a month.
On Christmas Eve, get your scraps out of the freezer and pop them in a pan. Add onion, garlic, cloves, bay leaf, parsley, olive oil and seasoning. Simmer for an hour.
Voila scrap stock for your Christmas Meal vegan gravy! Any excess can be chilled and stored in the fridge for a few days or pop back in the freezer for your next feast.
